favorite lasagna

there are some good lasagna recipes out there..
this one is my personal favorite i've made so far.
the recipe doesn't look amazing from the get-go,
but it is. we love it because it is a little healthier
with the cottage cheese instead of ricotta, and
mainly because it's just simple. sometimes with
a dish like lasagna, simple = best. here you are!

our favorite lasagna
--ingredients--
12 lasagna noodles {we like to use whole wheat}
1 pound lean ground beef// turkey {i use a ground turkey and we LOVE it}
2 cloves garlic, chopped
1/2 tsp. garlic powder
salt & pepper, to taste
1 package cottage cheese {16 ounces}
2 eggs
1/s cup shredded parmesan cheese
1.5 jars {25 ounces} tomato-basil pasta sauce
2 cups shredded mozzerella cheese

--directions--
1. preheat oven to 350 degrees F
2. fill a large pot with water {salt if desired} and bring to a boil over high heat. add lasagna noodles a few at a time once the water is boiling, and return to a boil. cook the pasta uncovered while stirring occasionally, until the pasta is "al dente" {has been cooked through but is still firm to the bite} ...roughly 10 minutes. remove the noodles onto a plate.
3. place the ground beef/ turkey in a skillet over medium heat and add garlic, garlic powder, salt and pepper. cook the meat, chopping it into small pieces while it cooks, about 10 minutes or until there is no more pink. drain grease.
4. in a bowl, mix the cottage cheese, eggs, and parmesan cheese until well combined.
5. place 4 noodles side by side into the bottom of a 9x13 inch baking pan; top with a later of the tomato-basil sauce, a layer of the ground beef mixture, and a layer of the cottage cheese mixture. repeat laters twice more, ending with a later of sauce. sprinkle the top with mozzarella cheese, and cover the dish with aluminum foil.
6. bake in the 350 degree oven until the dish is bubbling and the cheese has melted..about 30 minutes. remove foil and bake until cheese begins to brown, about ten more minutes. allow to cool for at least 10 minutes before serving.

enjoy..and dream of italy!
XO
